Isolated Soya Protein (ISP) is a highly refined form of soy protein, containing at least 90% protein content on a moisture-free basis. ISP is derived from defatted soy flakes, which are produced by removing oil from dehulled soybeans. The extraction process involves solubilizing the protein at a specific pH, followed by precipitation and washing to remove non-protein components. The resulting protein curd is then dried to produce the final isolate.
